Wild Maine Blueberry Vinaigrette Grilled Peaches with Vanilla Bean Ice Cream and Pistachios

Directions

  1. Wash peaches and fresh mint. Heat grill to medium-high.
  2. Slice peaches into halves, carve around pits.
  3. Brush each slice of peach with Wild Maine Blueberry Vinaigrette.
  4. Grill peaches cut side down for about 2-3 minutes until grill marked.
  5. Add one scoop vanilla bean ice cream to bowl. Add two grilled peach halves.
  6. To serve top with finely chopped pistachios and fresh sprig of mint.
