Zucchini Ribbon & Backyard Farms Tomato Salad with Balsamic Vinaigrette

Directions
Using a mandolin or sharp knife, thinly slice zucchini and summer squash into ribbons. Place in bowl.
Heat olive oil in a saute pan over medium high heat. Add zucchini and summer squash ribbons. Saute for 5 minutes, until slightly wilted and warm. Remove from heat.
Halve cocktail tomatoes and add to bowl.
Add Balsamic Vinaigrette to taste, toss.
To serve, top with slivered basil and shaved parmesan.
